"Cretons" is a meat spread which is a favorite with "Quebeckers." It may also be used as a meat loaf. The original recipe calls for leaf lard, which at present is not available, and to replace it other fat saved from meat cooked in the home may be used.

To English-speaking Canadians, Christmas feasting includes the traditional turkey, plum pudding and Christmas cake. French-speaking Canadians go to mass at midnight Christmas Eve, followed by a feast or "reveillon." Foods are the traditional tourtieres (pork pies), ragout de patters (pork hock stew), cretons made from pork, croquignoles (rich, twisted doughnuts) and cakes shaped and iced to resemble Yule logs.
