It frequently happens that some of the fish, taken towards the close of the fishing season, is not fit to be put on-board for exportation . . . It is called mud-fish; though this appellation belongs more properly to another kind, expressly prepared for the English market, where it is generally preferred. This last is split not quite open, but only down to the navel; it is then salted and washed in the usual manner, and barrelled up in a strong pickle of salt boiled in water.
